In 2015, we introduced The Boathouse Oyster. The oyster is the result of a project that started when our chefs toured Chapel Creek Oyster Company’s farm in the Chesapeake Bay. Trey, Chapel Creek’s owner and farmer, took us through the oyster farming process, and we got an idea. We could be a part of this. We could not only support, but work with, a local farmer to close the gap between farm and table.
Trey was immediately on board, so we started working on our signature oyster. The goal was to grow an oyster that achieves what we believe is the ideal flavor profile. And so we did.
The Boathouse oyster has a satisfying savor. It is mildly briny, a gentle reminder that it was harvested from the VA coastline just hours before it hits your plate.
